Oak chips are a great-value alternative to barrels for fermenting or ageing your wine. Oak barrels are used all over the world to age premium wines. The effects of barrels on wine are mainly a slow oxidation of the wine on one hand, and the transfer of tannins and aromatic compounds on the other hand. Chips permit this transfer under good conditions, provided that they are made of the same quality of oak as used for barrels, as it is the case with our chips, but they don’t bring about slow oxidation, although they do contain a small amount of air.
We offer oak chips in two varieties, American and French.
Each of these oak varieties can also be toasted to different levels
untoasted | light toast | medium toast | heavy toast
Un-toasted chips or light toast are recommended during the alcoholic fermentation. More often, medium and heavy toast are used during the ageing.
