Wax is used for coating of rennet ripening cheese. It protects the cheese from drying, dirt and microbes - primarily mold.
In addition, coated cheese is simply beautiful!
It is safe to melt wax in double boiler so that wax in not subject to direct flame. Never leave wax unattended.
Wax can be brushed onto a dried and chilled cheese, or you can very carefully dip your cheese into the wax pot one side at a time. Two thin coats are preferable to one thick coat.
Wax is simply peeled off and can be strained through butter muslin to be reused over and over again.
Store all paraffin waxes in a cool place, away from direct sunlight.
