fermentation is good and running, result is great, taste excellent, bottle fermentation is tried, try not yet closed, very good in taste
Yeast is a living thing. The most important thing is that it is still alive. You can tell by the fact that the fermentation starts quickly. That was the case with me in the apartment (room temperature). The yeast is very fermentative and I am therefore very satisfied with the product. Whether it is actually the yeast strain I can not judge (I'm not a microbiologist). To judge the aroma would require a direct comparison test (or a lot of experience), I did not do that. I have not tested the absolute alcohol tolerance, because I keep my wine to vinegar and therefore do not need high alcohol content.
The dry yeast arrived safely sealed in a metal foil bag. The expiration date was far from being reached. Since I make only very small approaches (2-3L), I have weighed the required amount on the fine balance and keep the rest in a screwdriver dry in the refrigerator. So I have already fermented several approaches and I think in a few weeks (possibly months) can still produce wine.
You should also add yeast nutrient salt.
Conclusion: I would (and probably will) buy the yeast again!
