Its difficult to tell the rum from this yeast apart from my other rum from another different yeast. As long as they both ferment properly, theres not much else to say. It works as i would expect yeast to work. I have no complaints about it.
I have used another packet to try and gauge if it is any good.
A basic wash of 5lts molasses and 10kg of soft brown sugar plus one packet of this yielded a gallon and a (not quite) half of 65% spirit.
Its a very clean ferment too, but can take 3 weeks to ferment fully. Very good result, clearly good yeast. Final product very good indeed. A few weeks on toasted oak should really bring out the character. Done on a reflux still with all but one packing piece removed.
