Ideal for a range of soft and hard cheeses
This culture can be used to make Feta, Cottage Cheese, Cream Cheese, Quark, Goats Feta, Chevre Frais, Hard Cheese (Cheddar, Parmesan, Gouda, Colby, Edam, Gruyere) and more.
Each sachet contains enough culture for 4L (1 US Gal) of milk for fresh cheese and 10L (2.5 US Gal) for hard cheese.
Mesophilic (MW3) is a freeze dried culture, which contain special strains of:
Lactococcus lactis subsp. lactis.
All Mad Millie cultures contain a small amount of dairy. These a shelf stable for 8 months out of the freezer but we recommend to store in the freezer if you can to extend their shelf life.

Simple buttermilk is hard to buy in my area because that section is full of junk milk products. I made a boursin style cheese with the curds and soda bread with the whey. When I get to my last sachet, I'll freeze buttermilk ice cubes to use as starter cultures for future batches. Eventually I'll need to buy more sachets.
Product was Fresh and Make Great Cheese
One always has to be worried about the freshness of cheese cultures, but there was absolutely nothing wrong with the culture from Mad Millie. It was fresh, made great cheese from the milk we got from our sheep and goats this early spring and we were very pleased with the results. In addition, they threw in some cider yeast, which I will definitely be using come autumn when we pick the apples on the farm and which was greatly appreciated. Thank you Mad Millie!
