ANIMAL LIQUID RENNET 100ml – Is prepared naturally by abomaso frozen and controlled. We extract the contents of the chimasics present in gastric mucosa and to obtain a clear, oily color liquid with a good amount of chemosine. The quantity needed is about 20 g (two large spoons) for every 20 litres of curdled milk brought to the coagulation temperature of about 36° C. This quantity can be varied according to temperature, milk acidity and the technology used. We recommend this kind of rennet for the preparation of: caciotta, mozzarella, sweet and seasoned pecorino, sweet caciocavallo, robiola, crescenza, marzolino, toma, goat cheese, fresh or seasoned cheeses. Using this rennet we guarantee a great yield and a natural fragrance to the finished product. Kept well closed and in a cool and dark place, does not suffer significant leakage of coagulant activity.

J'utilise cette présure pour préparer, en amateur, mes fromages.
Pour un mélange de trois litres de lait de vache avec cent grammes de yaourt, j'obtiens un bon caillé, bien ferme, en quelques heures, avec seulement une cuillère à café de produit.

Bon produit.
La présure permet de faire du fromage blanc. J'ai en fait à base de lait de vache et de lait de chèvre. Je n'ai pas encore essayé de les faire sécher, mais ce sera ma prochaine expérience.
En revanche, j'ai lu sur certains commentaires que la présure ne fonctionnait pas. Peut-être n'était-ce pas le même lot. Ou peut-être les personnes ont-elles omis de faire "chauffer" le lait. Le lait doit être tiède pour bien coaguler, car sur du lait froid, bien sûr, ça ne fonctionne pas (ou très peu). Si l'été le lait est à température ambiante (28 ou 30), je pense qu'il ne sera pas utile de le chauffer, mais en hiver, chez moi il fait 19°, c'est trop froid pour que le lait se transforme en fromage.

Prodotto ottimo, al primo uso con latte normale pastorizzato ha dato un buon risultato e una buona resa.
